Remove any husks from corn, rinse, then place into boiling water. Once cooked, remove from water and let cool to touch. Remove corn from cob and place corn kernels into medium size mixing bowl. Add bell pepper, onion, cilantro, lime juice, salt and pepper and mix ingredients together. In a separate bowl mix mayonnaise and hot sauce together. Serve topped with Cotija cheese and hot sauce – mayo mixture. Makes 8 servings.
